One-dish meals are my very favorite meals to make.  Less cleanup afterwards is a huge attraction.  And who better to dish out great recipes than the esteemed Culinary Institute of America?  And, the recipes in this book are from all over the world, not just local American fare.  They offer Soups; Stews; Braises; Pastas and Baked Dishes; Sautés and Stir-Fries, and Light Fare.  Now, one-dish meals mean different things to many people, and they are clearly defined in this book.  For example, the Institute mentions stews, braises, soups, lasagna-type dishes, as well as omelets, quiches, stir-fries, or even a chef's salad.  All one-dish meals.  As far as soups go, I always love chucking in whatever I have in the fridge regarding vegetables.  However, they say, "Remember that the soup you produce will only be as good as what went into it."  That said, I know you should always (nearly always) use good and fresh ingredients.  I have to try the Cioppino - what can I substitute littleneck clams with?  Also on my list to try are these yummy-sounding recipes: Hot and Sour Soup (my favorite); Curried Eggplant and Lentil Soup (sounds like heaven); Lamb Khorma (I'd walk ten miles barefoot in the snow for a good lamb khorma!); Oxtail Stew in Red Wine (I'd sell my soul for a good oxtail stew); Monkfish Stew; Braised Lamb Shanks (I adore braised food, and lamb shanks!  Oh my goodness.); Crawfish Étoufflée; Eggplant Parmesan; Potato Casserole with Parsnips and Leeks, and Pork Cutlets with Mushrooms and Spinach.  There is such a wide variety of truly delicious meals in this book - it would be welcome in any cook's kitchen and would make a great Christmas gift.
Illustrated.  No nutritional guides.
Conclusion - An absolute MUST in every kitchen, especially where wholesome and impressive meals are prepared.  Simply scrumptuous.
