Fiesta Mexicali - Simple Mexican Cuisine with an American Twist
"Mexicali fare is fun and casual, light, fiery fresh, and exciting," says author Kelley Coffeen. There is some interesting reading about Mexican ingredients, like cheese, tortillas, and Tequila. Of course, what would a Mexican meal be without a salsa or two? Very easy to make and they truly are part and parcel of the menu. We're given some interesting recipes such as Sweet Peach Salsa, Pineapple Salsa (sounds deliciously refreshing), Fresh Salsa Verde, and Queso Fundido. Contents of the book include: Salsas & Spreads; Appetizers; Light Entrées; Cocktails, and Decorating Ideas (this will really help get your party or fiesta into the swing of things). I found these recipes just begging to be tried: Black Bean Bruschetta; Spirals (a great party food); Roasted Garlic Chicken Quesadilla; Margarita Chicken (sounds absolutely delicious), and Shrimp Avocado Nachos. Interesting-sounding cocktails are: Margarita Chardonnay; El Matador, and Paloma. I rather fancy trying the Citrus Kiss recipe as well. Apart from the enticing food, I just love the fabulously decorated Mexican plates. I'm going to start collecting pretty plates one day soon - they really cheer me up. Loved the pot on page 47.
