There's nothing nicer to eat in winter than a hearty casserole.  Warm, nourishing, and oh so comforting.  These recipes are a collection of Pillsbury Bake-Off contest entries in the casserole category, going back to the 1950s when the first one was held.  The recipes improved over the decades as newer and improved kitchens evolved, as did the categories, to include Mexican and Tex-Mex dishes.  The categories this book offers are: Hearty Beef Favorites; Savory Pork Suppers; Comforting Chicken & Turkey; Seafood & Meatless Mainstays, and Dinner Pies & Quiches.  Of course the recipes do feature a Pillsbury product and come from entrants from all over the country.  Take for example these tempting recipes: Hungry Boys' Casserole (1963); Hearty Crescent Beef Bake (1971); Crafty Crescent Lasagna (1968); Ham 'n Cheese Omelet Bake (2004); Speedy Layered Chicken Enchilada Pie (2002); Fiesta Chicken Casserole (1986); Louisiana Shrimp Bake (1961), and Spinach and Mushroom Enchiladas with Creamy Red Sauce (2008).  I have to say that I really liked the look (and sound) of the Spinach, Sausage, and Feta Quiche (2008) recipe.  With nutritional guides for each recipe, I have to wonder why so many recipes feature condensed canned soups, or for that matter, flaked potatoes or canned chicken (yuck), or even worse, canned sweet potatoes (gross).  Personally, I don't like cheese and meat (too much fat) so I don't go for "cheesy baked beef" dishes (lasagna being the exception).  Neither do I like too many canned vegetables — fresh is so much healthier for you and so much tastier.  What I did appreciate were the altitude variations as I live at 6,000 feet.
Beautifully illustrated.  Nutritional guides.
Conclusion - I liked the recipes I picked above, otherwise not fresh enough ingredients for my liking.
