Vegetarian Southwest - Recipes from the Region's Favorite Restaurants
Who said vegetarianism was just a passing fad? Not! It's been around forever, only now we finally get it, that too much meat isn't good for us. (In fact, too much of anything isn't good.) In this book we have recipes from the southwest (traditionally Arizona, New Mexico, southwestern Colorado, and southern Utah), from the region's most popular restaurants. And vegetarian doesn't mean lentils and tofu only. Nowadays, there is an enormous array of fresh vegetables available, and more and more farmers' markets around - which translates to an astounding choice out there. Contents in this book include: Soups; Entrées, and Breads. Not a huge selection but something you can get started with. Dishes that appealed to me, and which I've not tasted even though I live in the southwest, are: Roasted Eggplant and Tomato Soup; Yavapai Vegetarian Chili; Southwestern Quiche, and Jalapeño Cheese Bread. Gone are the days when Tex-Mex ruled, and ditto for tacos, burritos, and "just add chiles". Not every dish has chiles in it either. Don't let the fact that this book was published almost ten years ago put you off - good food, and healthy food, never goes out of style.
