Eating vegetables (and fruit) has never been more important as more and more people need to cut back on fats and lower their cholesterol. Vegetables needn't just be boiled and plain and unappetizing as these recipes have been tried and tested and new ideas keep popping up. They've included Starters, Soups, Salads, Entrees, and Side Dishes. You'll never be stuck again especially when it comes to preparing something for your vegetarian family members or friends coming to dinner. The Vegetable Frittata looks scrumptuous as do the Stuffed Mushrooms as starters. How about Potato Tortilla? Interesting soups include Chili, Corn, and Red Pepper Soup; Spicy Parsnip Soup, and Cream of Fennel and Leek Soup. Tempting entrees include Squash and Feta Pie; Szechuan-style Eggplant; Zucchini Pasta Bake, and Vegetable Pasta Torte. Each recipe is beautifully illustrated, which is one of the reasons I love these little books so much. I'm not that innovative when it comes to dreaming up ways to make vegetables a little more interesting, and now I don't have to rack my brains anymore.
