To me, soups are just another one-pot meals.  And you know how I feel about one-pot meals, right?  They're the best.  Quick, efficient, healthy and delicious.  In my book, you can't beat that.  So, it goes without saying that I love reading soup cookbooks, and this one was no exception.  These recipes come courtesy of a host of well-known chefs, cookbook authors, teachers and others, and there is a diverse selection of recipes that you're ever likely to find.  Firstly, stocks and broths are discussed (an important distinction) and then you have recipes for Chicken Stock, Beef Stock, Fish Stock, and Vegetable Stock for those who wish to make their own.  Then we're given the extremely helpful "Store-bought Broth Made Better" recipes — a great idea to stretch broth from a can and make it healthier.  Some of the recipes are from the likes of Jacques Pépin, Mark Bittman, Joyce Goldstein, Madhur Jaffrey, Rick Rodgers, and Alice Waters among many others.  This book offers Vegetable and Vegetarian Soups; Bean, Grain, and Legume Soups; Chicken, Turkey, and Duck Soups and Stews; Meaty Soups and Stews, and Fish and Shellfish Soups and Stews.  Some of the recipes that jumped out at me, begging to be tried, are Onion Soup Gratinée; Fall Mushroom Soup; Cream of Corn Soup [with leeks]; Smoked Ham, White Bean, and Tomato Soup; Cream of Chicken and Fennel Soup; Texas Chili Soup; Crab and Asparagus Soup, and Salmon and Corn Chowder with Fresh Herbs.  The very best part of this book is that part of the proceeds goes to NextCourse, an organization that promotes sustainable food in public institutions.  Visit the NextCourse website.  I'm also working on a cookbook to use as a tool to raise funds for women and children who flee abusive homes.
Beautifully illustrated.  No nutritional guides.
