Salsas and Tacos
Now that I'm firmly entrenched in the southwest, I've had the chance to sample a variety of salsas. Tacos, not so much. This delightful book is crammed with interesting recipes to thrill your palate and your family and friends. Whether it's a fiesta you're planning or having friends over, there's a huge selection of recipes to choose from. Gone are the days of tomato and chili salsa! And you can go from mild to excrutiatingly hot. You can also use a salsa as a fruit or vegetable side. Salsas that caught my eye were Tropical Fruit Salsa (papaya, pinapple, mango, and more); Tomatillo-Avocado Salsa (yum!); Mango Salsa (for fish), and Grapefruit-Orange Salsa. The tacos section of the book is just as impressive. I don't like crispy tacos but I do like soft flour tortillas so I can work around the crispiness. I do fancy the Tacos of Calabacitas, Santa Fe Wraps, and believe it or not, Apple Pie Tacos. We're also given "ingredients for salsas", "roasting and toasting chiles", and chiles in general. There are a few resources as well. Beautifully illustrated. No nutritional guides. Visit the Santa Fe School of Cooking at their website.
