What a very inspirational book this appears to be.  I love the beautiful photos; just gorgeous enough to make one hungry.  Summer is the perfect time for salads but there are many salads to be made and enjoyed as a meal in both hot and cooler/cold seasons, such as Smoked Potato Salad; Chicken Dinner Salad; Couscous Salad with Chickpeas, or Roasted Asparagus and Tomato Penne Salad with Goat Cheese.  The book is divided into these sections: Vinaigrettes, Dressings & Toppings; Greens & Vegetables; Pasta, Bread, Beans & Grains; Poultry and Meats, and Shellfish & Fish.  I liked the recipes for Easy Herb Vinaigrette, Creamy Caesar Dressing, and Cumin Vinaigrette.  And, they've also tagged some recipes that are kid-friendly, make-ahead, portable, and vegetarian.  They also give tip boxes which are very useful.  Their Nutritional Analysis is very handy if you're weight/health conscious.  Some of the recipes that appealed to me include: Jalapeño-Lime Slaw; BLT Bread Salad (unusual); Chicken and Wild Rice Salad with Almonds (I could do without the cranberries); Mediterranean Barley Salad; Spicy Southwestern Tabbouleh; Chicken and Glass Noodle Salad; Herbed Shrimp and White Bean Salad, and Spanish-style Tuna and Potato Salad.  I like the idea of shelling Brussels sprouts on pages 44/45.  Personally, I don't like flowers in my food, as on page 36.  And I don't particularly enjoy fruits in salads, as in Yellow Plum Salad or Toasted Chickpea and Apricot Salad.  However, I do like fruit salads.
Gorgeous illustrations.  Nutritional guides are provided.
Conclusion - Easy to make salads that will brighten anyone's dinner table.
