I've always wondered why some people cook their vegetables until they're completely dead. I keep thinking they're destroying all the goodness, and personally, I like a little crunch here and there. Jenny Ross says, "Forgoing cooked oils and greasy, fried foods is a great place to start; and cutting back on animal products and focusing on plant-based cuisine proves a wonderful foundation for health". She also explains the whys and wherefores of healthy eating equalling a healthy body and a healthy life. She comments, "Raw foods constitutes a plant-based diet, which has been proved to maintain strong vital organs and optimal bodily function". The Raw Foods shopping list is a comprehensive one which not everyone can afford or find locally, which is why so many people don't eat properly or as best they could. A few things on the list include apples and pears; avocados; heirloom, Roma or vine tomatoes; raw tahini; raw flaxseed; Macadamia nuts; olives; shredded coconut, and cold-pressed extra-virgin olive oil, all of which are obtainable almost everywhere. There are a great many more items on the list. This way of preparing food is a complete turnaround from the foods and preparations we're used to, and might take some getting used to, and sourcing many ingredients may prove challenging. Ross also says that the body should err on the alkaline side rather than on the acidic, as "disease cannot live in an alkaline environment". Some of the recipes that appealed to me include: Tahini Spread; Kiwi-Lime-Strawberry Parfait; "Fried"-Avocado Mini-Tostadas; Lemon-Pesto Pasta (with julienned zucchini being the "pasta"), and Asparagus and Onion Split Pea Soup. I have a feeling electricity bills will be reduced eating this way, as there is hardly any cooking involved. This book is packed with useful info on a huge variety of nutritionally beneficial foods that is worth at least reading.
