If all Rachael Ray does is encourage us to cook, even if it's at lightning speed, she'd have done her work. I still don't believe there's no time to cook - make time! Especially if you have children. Rachael's famous 30-minute meals are featured abundantly in this book, as well as some 15-minute meals! Yip, fifteen minutes. (How about Provençal Tuna Melts; Caesar-ish Salad and Fried Ravioli; Curry-Seasoned Cod with Cool-Spicy Yogurt Sauce, or Grilled Chicken Sausages with Pumpkin Polenta?) She has also given a huge selection of 60-minute meals for those times when time is not that big a deal. In this book Rachael covers Sammie Night; Hot Pots; Using Your Noodle; The Salad Bar; I'll Have the Fish; Who You Callin' Chicken?, and MMMMMM, Beefy. Each category has 15-minute, 30-minute, and 60-minute recipes, so really, now there is no excuse - get your butt in the kitchen. Some of her yummy-sounding recipes include: French Onion Burgers with Oven Fries and Dijon Gravy or Caribbean Burgers with Mango Salsa - I do love a huge and nourishing "sandwich" as a meal. How about Curried Vegetable Stoup (wonderful); Winter White Chicken Stew; Spicy Sausage, Chicken, and Bean Pot; Scotch Salmon with Farfalle, and Shrimp with Tarragon-Tomato Sauce?
I'll say this again: Shepherd's Pie is only Shepherd's Pie if it's made with lamb/mutton. Anything else and it's Cottage Pie.
