One-pot dishes are my specialty (I cook for one so it's much easier and more efficient) so when I came across this book, I was more than delighted. And, one-pot dishes don't have to be just meat and potatoes or rice and a vegetable or two. No sir. One-pot dishes can either be a pot or a pan used on top of the stove, a casserole cooked in the oven, a wok, or a crockpot. Author Pat Dailey offers the following categories: Dinner in a Bowl (Soups, Chilis & Gumbos); Speedy Dinners; Dinners in the Oven; Chicken & Turkey for Dinner; Meaty Dinners; Seafood Dinners; Pasta Dinners, and Mostly Meatless Dinners. Recipes include, among others: Crab, Shrimp & Corn Chowder; Sante Fe Chicken with Black Beans, Corn & Poblanos; Beer & Chili Braised Beef Brisket; White Bean, Chicken & Sausage Cassoulet; Italian Fish Stew with Vinegar-Glazed Leeks & Onions; Pasta Paella, and Peppery Chickpea & Okra Stew. Scrumptuously tempting. Each recipe gives preparation time, cooking time, and yield. There's also a U.S./metric conversion chart. Not illustrated and no nutritional guides but loads of practical information.
