Magnolias - Authentic Southern Cuisine
Chef Donald Barickman, a southern chef who helped revolutionize southern cooking (Carolina Lowcountry Cuisine), and help put Charleston on the culinary map, is part-owner of Magnolias (and Cypress and Blossom) restaurant. Here he shares his love of downhome cooking with dishes such as Cajun Chowder; Dirty Rice; Warm Salad of Artichoke, Lemon, Leek and Capers; Carolina Crab Cakes with Tomato Gravy, Creamed Corn, and Sautéed Spinach; Lowcountry Bouillabaisse (sounds scrumptuous); Hickory Smoked Pork Shoulder with Carolina Barbecue Sauce, Crackling Cream Biscuits, and Spicy Yellow Corn, and Magnolia's Baked Creams with Orange Custard Sauce. What about Chocolate Chip Pecan Pie with Bourbon Sauce? Is it a "southern" thing to have so many flavors on a plate? Like his Coriander-Seared Tuna Fillet with Jalapeño and Mango Vinaigrette, Pan-Fried Potato Cakes, and Sautéed Escarole. I had to give grits a complete miss. Haven't quite got the hang of them and am not tempted. Contents cover Uptown/Down South Starters; Soups and Salads; Southern Sides; Grits and Gravies; Fish and Shellfish; Meats and Poultry, and Southern Sweets. Again, using local and fresh is important if you're wanting to produce good food. Chef Barickman also gives us what to keep in our "southern" pantries, as well as a short Resources directory. See my review of Donald Barickman's other restaurant cookbook, Cypress. I like the large and legible print - so essential in a cookbook. Beautifully illustrated. No nutritional guides.
