If you want to change your eating habits yet maintain a certain amount of food that you love, this is the place to start.  There are lots of recipes of foods that we've come to love but they've been "lightened".  Recipes offer "what makes it light" sidebars so you can choose how light you want to go.  This book is divided into these categories: Breakfast, Dinner, Lunch, and Sides and Desserts.  Not only do we get a recipe, there are also "5 Ways with" suggestions as to how you can also use various items in other recipes.  The very first recipe is for Huevos Rancheros, my very favorite breakfast!  And, this recipe is not too different from the traditional one.  The only difference is that they don't use refried beans—not that I'd miss them.  All of the recipes are all about eating healthier, and we need to do something about our bad eating habits!  Some of the recipes I'd really like to try include: Garden Vegetable Crustless Quiche; Jalapeño, Sausage, Jack and Egg Breakfast Braid; Broccoli and Cheese Soup (I'd find something other than Veleeta light to use); All-American Chili; Pesto Chicken Salad Sandwiches; Gulf of Mexico Gumbo; Company Pot Roast; Sweet Potato Casserole, and New York Cheesecake.  There were so many delectable recipes (and photos) that it wasn't easy choosing the ones I did.  None sounded like "diet" food but were so much healthier.  I think I would substitute whole wheat flour for all the all-purpose white flour recipes whenever possible.  I loved the look of the muffins and cakes!
