Author Jane Butel's experience is a bonus for all of us who know little about heating up a dish or two.  If you are one of those people who enjoy hanging onto the roof of your mouth by a thread or sweating bullets as you eat, then this collection of fiery delectables is right up your alley.  Ms. Butel has given us useful information about chiles and other spicy ingredients and she knows what she's talking about - she founded the Jane Butel's Southwestern School in Albuquerque, one of the best vacation cooking schools in the world, and she's also the founder of the Pecos Valley Spice Co.  Of course you can always tone down the "heat" for others who can't handle the intensity.  She gives us everything from appetizers to desserts and some of the recipes include Fresh Vietnamese Vegetarian Spring Rolls, Southwestern Vichyssoise, Turbot Leek Martini, Devil's Shrimp, Chicken Cutlets with Five Peppers, Lamb Curry with Condiments (not easy to find good curry recipes), Zucchini Fritters, Jalapeno Jelly, and Belgian Dessert Waffles.  Not fully illustrated but the pictures used are very appealing.  Superb for ideas on what to make for dinner guests that is completely different.
Conclusion - This book will come in handy - it's full of surprises.
