I often wonder, and worry, about all the bottled and canned goods we consume.  Most of them have additives and preservatives which are not good for us, especially when consumed in bulk, as we do.  And when it comes to salad dressings, one look at the rows and rows of dressings on store shelves, says it all.  We love our salad dressings!  Food and lifestyle writer Jessica Strand brings us a wide variety of salad dressings to try making for ourselves.  After her Introduction, she offers ingredients to keep on hand (oils, vinegars, mustards, etc.), the different oils and vinegars, and toppings for your salads.  Her Contents include: Quick Vinaigrettes, Creamy Creations, and Fabulous Flavors.  Along with Jessica's recipes, she offers salad ingredients suggestions, so much of the guesswork is taken care of.  I fancied these recipes for myself: Fresh Herbal Vinaigrette; Roasted Red Pepper Vinaigrette; Green Goddess Dressing; Creamy Dill Dressing (great with fish), and Lime, Tequila, and Cilantro Dressing.  All are quick and easy to make (no excuses) and you'll love and appreciate the freshness - no more additives and/or preservatives.  There are also a few salad recipes which will help you when you need something different to make - Salad Lyonnaise or Rib-Eye Steak Salad to name just two.  And, yes, there is a recipe for Ranch Dressing!  Look around for unusual dressing jars or bottles to add extra flair to your home-made dressings.
