The Big Book of Chicken
by Maryana Vollstedt
Chronicle Books
ISBN 978-0-8118-5528-0
Published May 2008 - Softcover - 368 pages - $19.95
This is cookbook author Maryana Vollstedt's umpteenth book, and it is all about chicken. What could be better? Even if you're new to cooking, don't despair, as you'll learn how to choose chickens when buying, the different parts of a chicken and how best to prepare them, how best to store chicken, the many different ways of cooking poultry, and more. Maryana covers Appetizers & Hors D'Oeuvres; Soups; Main Course Salads [a fabulous idea]; Sandwiches; Stove-top Chicken; Chicken from the Oven; Casseroles, and Chicken on the Grill - something for everyone. Her recipes are not only American fare, but include ethnic recipes such as Mediterranean Chicken Sandwich in Pita Bread; Spicy Bouillabaisse with Chicken; Chicken Paprika with Caraway Noodles; Chicken Piccata; Chicken Tagine, and Chicken Curry, among many other delicious ones. Other yummy recipes that appealed to me are: Chicken Chili Soup; City Salad; Chicken and Pineapple Salad; Chicken Breasts and Fennel Sauté; Chicken, Mushrooms, and Walnut Stir-Fry; Spinach-Rice Casserole with Chicken; Grilled Chicken Breasts with Onions and Bacon, and Chili-Lime Drumsticks and Thighs. Yay, I found a recipe for chicken liver pâté! If this book doesn't get you drooling, nothing will.
Not illustrated. No nutritional guides.
Conclusion - A very suitable (and extremely useful) book for anyone just starting out, i.e. college leavers, or anyone wishing to extend their chicken repertoire!
