Don't you just love cheese?  The enormous variety, from all around the world?  Cheese is probably one of the most versatile ingredients around.  It can be used in both savory and sweet dishes, hot or cold.  Paul Gayler's book gives you an abundance of recipes as well as how cheese is made, choosing and storing cheese, information on the various types of cheeses, wines and cheeses, cooking with cheese, and cheese and your health - all very informative and well worth reading.  His Contents include: Basics; First Courses; Soups; Salads; Pasta, Pizza, Rice & Gnocchi; Fish, Poultry, Game & Meat; Vegetable Dishes; Cold & Warm Dishes, Cold & Warm Desserts, and Alternative Cheeseboard.  I adore cheese and love cooking with it, but, I'm not very adventurous when it comes to trying out "different" cheeses - I can't bring myself to taste blue cheeses.  Being unemployed limits my grocery budget severely too.  However, these recipes caught my attention: Parmesan Brioche Toast with Taleggio, Sautéed Plum Tomatoes & Oregano; Emmenthal "French Toast" with Asparagus & Poached Egg (sounds yummy); Bucatini with Feta, Pickled Chili, Tomato & Mint; Saffron-Grilled Cod Fillet with Aligot & Beurre d'Escargot; Chicken Schnitzel with Mozzarella, Tomato Tapenade & Basil; Zucchini & Cantal Clafoutis with Rosemary (looks spectacular), and Panna "Ri-Cotta."  I couldn't stop salivating just reading through this book.

Conclusion - NO kitchen should be without this book!  It's a superb collection of cheese recipes.
