If you like casseroles, and enjoy making them, then this is the book for you. Over 500 recipes! You'll never again be stuck for something to make. Using the "one pot" method is so much more convenient, and there's less to clean up. I'm so glad to hear Beatrice Ojakangas say that we shouldn't use canned soups in our casseroles, but should rather make our own sauces and broths. To me, the thought of a canned soup substituting for creaminess, is off-putting. Besides, as she says, they'll full of sodium and often MSG - both known to be very bad for us. Ms. Beatrice covers these categories, among others, in her book: Casserole Basics, where you'll find out how to make a Basic White Sauce or a Basic Chicken Broth or how to caramelize onions; Casserole Appetizers & First Courses; Poultry Casseroles; Pasta Casseroles; Side-Dish Casseroles; Vegetarian Casseroles; Casseroles for Kids, and Dessert Casseroles - 17 chapters in all! How about these unusual-sounding recipes for a change? - Breakfast Potato Pie; Chicken Cobbler; Rice and Burger Casserole; Turkish Lamb Stew and Sultan's Delight; Cod and Plantain Casserole; Walnut and Broccoli Casserole, or Beef Nacho Casserole. She does of course cover the more traditional casseroles as well. I've never thought of bread as a casserole.
