Carbone's Cookbook
by Jane and Michael Stern with recipes by Gaetano Carbone and Vincent Carbone
Rutledge Hill Press
ISBN 1-4016-0122-7
Published September 2003 - Hardcover - 209 pages

What was originally called The Southern Plantation Restaurant back in the 30's, is now the famous Carbone's in Hartford, Connecticut.  This restaurant has been family-run for three generations and is still going strong.  They even have their own catering truck, fully fitted out with a kitchen, so that they are able to prepare all the food right there and then.  I enjoyed the comprehensive history of the Carbone family, and the restaurant, and it includes some historic photographs of the generations and staff members. I enjoyed reading about their clientele, which include a colorful array of people from all walks of life, as well as their quirky little customs which have endured.  Although not full of glossy photo illustrations (there are a few), this cookbook is nevertheless appetizing and loaded with wonderful dishes to choose from.  From soups to desserts and coffee, there's plenty to drool over and help you decide when you next have to prepare an Italian culinary dish.  Recipes that appeal to me and beg to be tried, include Risotto Paella; Maccheroni con Melanzane al Forno (Baked Eggplant and Macaroni), and Cosciotto d'Agnello (Lamb Shanks).  The recipes all seem relatively straighforward too.  One would have thought, coming from a restaurant, they would be a lot more complicated but I guess speed is of the essence in food preparation in restaurants.  Of course they also have a Pesto recipe.  So generous of this established and esteemed family restaurant to share their recipes with the world.
Conclusion - A great addition to your kitchen cookbook collection. BookBrowser
