This is something I've always wanted to try, but, still not having my own place, I'm not yet able. However, I don't let this stop me from learning as much about canning and preserving as I can. I've always admired the colorful jars lined up on shelves in friends' homes, always an indication of the love in the kitchen. Why else would one go to so much trouble when almost anything can be bought at a store? Even at farmers' markets or fairs, I get a kick out of seeing all the jars and goodies for sale. Despite this book being published in 1999, it's not out of date - canning and preserving has been around for yonks. You might perhaps be able to buy more modern jars. In this book you'll find recipes for Jams, Jellies, and Spreads; Totally Tomatoes; A Peck of Pickles; A Cornucopia of Vegetables; The Fruit Basket, and Canning and Freezing Charts. I fancy Gingered Peach Preserves (reminds me of my grandmother); Chunky Homemade Salsa; Dill Pickles (my mom makes great ones), and Papaya-Rum Chutney. The best thing about canned fruits and vegetables is that you can enjoy them out of season - a treat. Partially illustrated with nutritional guides. Home canned and preserved goodies make wonderful gifts. It's important to read the Canning Primer pages. I would like to have had a recipe for Fig Jam.
