Café Boulud Cookbook - French-American Recipes for the Home Cook
by Daniel Boulud and Dorie Greenspan
Scribner
ISBN 0-684-86343-X
Published November 1999 - Hardcover - 400 pages - $35.00

This is the second Chef Daniel Boulud cookbook I've reviewed (the other one is Braise), and both are a joy.  I find Chef Daniel's passion contagious, and his talent and verve reach out to grab you.  This book is arranged "...according to the four muses that have inspired my cooking: La Tradition, the classic, full-bodied foods of France; La Saison, the bounty of the market; Le Voyage, the foods of lands near and far, and Le Potager, vegetarian dishes that extol the goodness of the garden."  However, we're encouraged to mix and match not only Chef Daniel's recipes, but to mix with our own recipes.  This is what you'll find under La Tradition, La Saison, Le Voyage, and Le Potager - Soups, Starters, Small Dishes, Lunches, and Anytime Food; Main Courses; Side Dishes, and Desserts.  Under Le Potager you have Soups, Starters, Small Dishes, Lunches, and Anytime Food; Grains, Beans, Pasta, and Risotto; Roasted, Stuffed, and Braised Vegetables, and Desserts.  Some of the delectable and tempting dishes, for me, include: Spiced Steamed Salmon with Chutney and Chard; Shrimp over Coconut-Curry Risotto, and Roasted Chicken with Tuscan Bread Stuffing.  I loved the little bits of Chef Daniel's personal history too.  Partially illustrated.  No nutritional guides but there are wine (drinks) suggestions for each dish - makes things so much easier for us.  Visit Chef Daniel Boulud at his website at www.danielnyc.com.
Conclusion - A delightful collection of fabulous recipes.
