Chef/author Clifford A. Wright is my kind of cook.  I too, believe in casseroles and love one-pot dishes.  What could be easier?  In this book, he goes into lengthy detail about the history of the casserole, the modern casserole, and the American casserole, just so that you will be fully informed.  He covers Breakfast and Brunch Casseroles; Meat Casseroles; Poultry, Dairy, and Game Casseroles; Seafood Casseroles; Pasta and Noodle Casseroles; Rice and Grain Casseroles; Vegetable Casseroles with Meat; Vegetable Casseroles without Meat, and Dessert Casseroles.  No wonder there are over 400 pages!  Some delightful recipes (most casseroles are relatively quick and easy to assemble, a huge part of their appeal) that caught my eye include: Egg and Bacon Strata; Sausage and Lentil Casserole; Bobotee (divine, and straight from my own kitchen); Ham and Broccoli Casserole; Chicken and Mushroom Casserole (sounds delicious); Flounder and Spinach Pie; Potato, Bacon, and Gruyère Casserole (very rich); Cauliflower and Fennel Casserole in Cream (rich and different), and the exotic-sounding Wild Strawberry and Cream Cheese Crêpe Casserole with Vanilla Sauce.  I liked the "leftovers" aspect, as too often they're not eaten and I hate wasting food.  Many of these recipes are adaptations from either Bed and Breakfasts, Inns, other people's books or recipes, websites, etc.  In fact, pies, baked pastas and sandwiches equal casseroles in this book.
I didn't like the porous paper used for this book - not practical in the kitchen.
Not illustrated.  No nutritional guides.
Visit Wright's website.
Conclusion - A huge variety of dishes to choose from.  Very useful.
