I love crepes. Or pancakes as they're sometimes referred to, thin pancakes. Or blinis or galettes. A lot of names for basically the same thing. This book offers the basics for each kind of crepe and then runs the gamut of Sweet and/or Savory variations. Recipes for English Muffins and Crumpets are also given. They're basically flour, eggs, baking powder, milk/water/beer, sugar and sometimes yeast. They are all cooked in pans, some turning out thicker than others. Some of the recipes I'm tempted to try myself include: Savory Galette (with ham and Gruyère cheese); Panarea Pancakes (with tomatoes, ricotta cheese, mozzarella and basil); Buckwheat Blinis with Smoked Haddock; Apple Crepes Caramelized with Butter, and Goanese Banana Pancakes. The photos are absolutely mouthwatering. I like pancakes as a quick meal or dessert, and as children we had plain pancakes with fresh lemon juice and cinnamon sugar as a treat.
Beautifully illustrated. No nutritional guides.
Conclusion - This little book would be welcome in most kitchens as a go-to for something different to serve as a meal.
